Marimbas Guatemalan Bakery & Restaurant (Guatemalan)
When Geny Alvarado opened Marimbas in December 2024, she wasn’t just starting a restaurant—she was fulfilling a dream more than 35 years in the making. Her family immigrated to the United States decades ago, carrying with them the hope of one day sharing the flavors and traditions of their home country, Guatemala.
“It’s been a family dream since we immigrated to the U.S … and God gave us the opportunity,” Geny says.
The idea for Marimbas began with Geny’s nephew and younger sister, who helped her bring the vision to life. Together, they set out to create a space that honors their heritage by serving food that tastes “similar to the flavors of our country, Guatemala.”
At Marimbas, authenticity is at the heart of everything they do. One of their standout dishes is El Pepián—tender chicken pieces simmered in a lightly spiced, homemade tomato stew with chayote, carrots, and green beans, served with rice and tortillas. Guests also rave about the freshly baked Guatemalan breads, made in-house daily and representing a cherished part of their culture. Bread is so special, in fact, that the family installed a bread prep counter in the dining area, inviting customers to watch and learn about the baking process each afternoon.
Marimbas is quickly becoming a neighborhood favorite, known for its warm hospitality and joyful atmosphere. “We give a warm welcome and people seem very happy with the food,” Geny says. Since opening, the restaurant has seen more walk-ins and a growing number of customers discovering—and returning for—their comforting, homemade dishes.
Looking forward, Marimbas hopes to continue growing, creating more jobs and opportunities for the neighborhood. The family is especially excited to expand their bread offerings and introduce more varieties that are meaningful to Guatemalans. They’re also building out their Guatemalan coffee menu, bringing customers even closer to the flavors of home.
